Steak & Onion Sub

Ingredients

  • 3 tablespoons oil
  • 1 large onion, in 1/2-inch slices
  • 1 tablespoon red-wine vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 small flank steak (1 pound)
  • 2 loaves (12 inches each) seeded Italian bread
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 6 romaine lettuce leaves
  • Salsa Mayonnaise (recipe follows)

Make It

1. Heat 1 tablespoon oil in medium-size skillet. Add onion; cook until almost tender, 10 minutes. Add vinegar, 1/4 teaspoon salt and sugar; cook until onion is tender, browned and liquid evaporates, 5 minutes. Remove onion to bowl. Wipe skillet.

2. Heat 1 tablespoon oil in skillet. Sprinkle remaining salt on steak.Add steak to skillet; cook over medium-high heat 10 minutes for medium-rare, turning once. Transfer to cutting surface. Let stand 10 minutes. Cut steak at 45 degree angle across grain into 1/8-inch-thick slices.

3. Meanwhile, cut each loaf crosswise in half; slice each half horizontally lengthwise. Brush inside of bread with remaining 1 tablespoon oil; sprinkle with oregano and thyme. Place on baking sheet.

4. Bake in heated 400 degree F oven until lightly toasted, about 5 minutes.

5. Layer bottom halves of bread with lettuce. Top with steak slices, onion rings and Salsa Mayonnaise. Makes 4 servings.

Salsa Mayonnaise

Ingredients

  • 1/2 cup finely diced tomato
  • 1/4 cup mayonnaise
  • 2 tablespoons minced onion
  • 2 tablespoons ketchup
  • 1 tablespoon minced jalapeno pepper
  • 1 tablespoon chopped fresh cilantro
  • 2 teaspoons fresh lime juice
  • 1/8 teaspoon salt

Make It

1. Combine tomato, mayonnaise, onion, ketchup, jalapeno pepper, cilantro, lime juice and 1/8 teaspoon salt. Refrigerate, covered, until using.
