Trim excess fat from steaks. Remove from refrigerator at least 30 minutes before grilling.
Heat gas grill to high or prepare charcoal grill with hot coals. Lightly brush steaks on both sides with flavored oil. Just before placing on grill, sprinkle both sides lightly with salt; grind a generous amount of black pepper on both sides.
Place on grill, cover and cook about 12 minutes. Turn and cook another 12 to 15 minutes covered or until the internal temperature reaches 130 degrees F on an instant-read thermometer. Do not overcook; exterior should be crusty, with a medium-rare interior.
Remove to a cutting board; let sit 5 minutes, then cut into a total of 8 pieces.
