Steak And Roquefort Salad

Ingredients

Steak:
  • 1 beef flank steak (1 pound)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Salad:
  • 2 tablespoons red-wine vinegar
  • 1/4 cup olive oil
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cucumber, peeled, chopped
  • 1 cup cherry tomatoes, halved
  • 12 cups assorted salad greens
  • 6 tablespoons crumbled Roquefort

Make It

Steak:

1. Heat broiler. Season steak with salt and pepper. Broil 6 inches from heat 6 minutes per side for medium-rare. Let rest for 10 minutes.

Salad:

2. Whisk vinegar, oil, mustard, salt, pepper in small bowl. Toss cucumber, tomatoes, greens in large bowl. Thinly slice steak across grain.

3. Put greens on 6 plates. Top with steak, cheese and dressing. Makes 6 servings.
