Speedy Italian Beef Pie

Ingredients

  • 4 cups Cook-First Ground Beef Mix, thawed (www.familycircle.com)
  • 1/3 cup chopped provolone cheese
  • 1/2 cup sliced green onion
  • 1 cup diced plum tomatoes
  • 1/4 cup chopped green olives
  • 1/4 cup grated Parmesan cheese
  • 3 eggs
  • 1 cup milk
  • 1 1/4 teaspoons ground sage
  • 1/4 teaspoon salt
  • 1 1/4 cups reduced-fat buttermilk baking mix

Make It

1. Preheat oven to 400 degrees F. Coat 13 x 9 x 2-inch baking dish with nonstick cooking spray.

2. Sprinkle beef mix, provolone, onion, tomatoes, olives and 2 tablespoons Parmesan cheese into prepared dish; spread level.

3. Beat together eggs, milk, sage and salt in a bowl. Stir in baking mix just until combined. Pour evenly over meat mixture in dish. Sprinkle on remaining 2 tablespoons Parmesan.

4. Bake in preheated 400 degree F oven for 35 minutes or until knife inserted in center comes out clean. Cut into squares and serve. Makes 6 servings.
