Peppered Steak With Pearl Onion Sauce

  • 1 pound small whole onions
  • 1/4 cup beef broth
  • 1/4 1/2 cup stick unsalted butter
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 cup Cognac OR: brandy
  • 4 club steaks, 1 inch thick (4 to 5 ounces each)
  • 1 teaspoon coarsely ground black pepper
  • 1/2 teaspoon salt
  • 2 teaspoons oil
  • 1 tablespoon chopped fresh parsley

Make It

Prepare Sauce:

1. Combine onions, broth, butter, sugar and salt in skillet. Bring to boiling. Reduce heat to medium. Cover; simmer, shaking skillet occasionally, until onions begin to brown, about 8 minutes. Slowly add Cognac to avoid flaming; cook, stirring, until sauce thickens slightly, 3 minutes. Remove from heat; keep sauce warm.

Prepare Steaks:

2. Sprinkle both sides of steaks with pepper and salt, pressing to adhere.

3. Heat oil in large heavy skillet over high heat. Add steak; cook 5 to 6 minutes on each side for rare. Transfer to platter. Spoon sauce over steaks. Garnish with parsley. Serve with Sesame Steak Fries. Makes 4 servings.
