Parmesan-Sage Meatloaf and Garlicky Spinach

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1/2 cup finely chopped yellow onion
  • 1 clove garlic, minced
  • 1 pound lean ground beef or ground turkey breast
  • 1/4 cup fine dry bread crumbs
  • 1 egg
  • 1/4 teaspoon kosher salt
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh Italian (flat-leaf) parsley
  • 1 tablespoon chopped fresh sage
  • 1/8 teaspoon freshly ground black pepper
  • 1 tablespoon honey
  • Garlicky Spinach

Make It

1. Preheat oven to 375 degree F. Line a shallow baking pan with parchment paper; set aside.

2. In a large skillet heat oil over medium-high heat. Add the onion and reduce the heat so the onion cooks gently without browning. Saute for 8 minutes or until the onion is translucent. Add the garlic and cook for 1 minute more.

3. In a large bowl mix together the onion mixture, the beef or turkey, bread crumbs, egg, salt, cheese, parsley, sage, and pepper. Shape meat mixture into a loaf shape (about 7x3x1-1/2-inches) in the prepared pan. Bake for 35 minutes. Brush top and sides of loaf with honey. Bake for 10 minutes more or until done (165 degree F).

4. Let meatloaf rest for 10 minutes before slicing. Serve with garlicky spinach. Makes 4 to 6 servings.

Make Ahead Tip

  • After shaping the meat mixture into a loaf, cover and freeze until firm. When firm, transfer to an airtight freezer container; seal, label, and freeze up to 1 month. Thaw in the refrigerator before baking. Bake as above.

Garlicky Spinach

Yield: abut 2 cups

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 2 cloves garlic, minced
  • 10 ounces baby spinach
  • 1/4 teaspoon kosher salt

Make It

1. Heat extra-virgin olive oil in a 12-inch skillet over medium-high heat. Add minced garlic and saute for 1 minute. Add spinach and kosher salt. Saute until the spinach is wilted, 2 to 3 minutes.
