  • In a large skillet heat oil over medium-high heat. Add the onion and reduce the heat so the onion cooks gently without browning. Sauté for 8 minutes or until the onion is translucent. Add the garlic and cook for 1 minute more.

  • In a large bowl mix together the onion mixture, the beef or turkey, bread crumbs, egg, salt, cheese, parsley, sage, and pepper. Shape meat mixture into a loaf shape (about 7x3x1-1/2-inches) in the prepared pan. Bake for 35 minutes. Brush top and sides of loaf with honey. Bake for 10 minutes more or until done (165 degree F).

  • Let meatloaf rest for 10 minutes before slicing. Serve with garlicky spinach. Makes 4 to 6 servings.

Tips

After shaping the meat mixture into a loaf, cover and freeze until firm. When firm, transfer to an airtight freezer container; seal, label, and freeze up to 1 month. Thaw in the refrigerator before baking. Bake as above.
