Nanny's Meatballs

  • 1 3/4 pounds lean ground beef
  • 1/2 cup plain bread crumbs
  • 1/4 cup freshly grated Locatelli cheese
  • 1 egg, lightly beaten
  • 2 tablespoons dried parsley flakes
  • 1 clove garlic, finely chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/3 cup canola oil
  • 1 jar (26 ounces) marinara sauce or 3 cups homemade sauce
  • 1/2 pound of your favorite pasta, such as rigatonti, cooked

Make It

1. In a large bowl, mix together ground beef, bread crumbs, cheese, egg, parsley flakes, garlic, salt and pepper. Form into 12 meatballs (about 1/4 cup mixture each).

2. In a large nonstick skillet, heat oil over medium heat until shimmering slightly. Add meatballs; brown on all sides, 8 to 10 minutes. Remove to a baking sheet lined with paper towels.

3. Place sauce in a large pot and bring to a simmer over medium-high heat. Add meatballs and simmer, covered, on medium-low heat for 30 minutes. Stir occasionally.

4. Serve over hot pasta, with additional grated cheese, if desired.
