Mini Meat Loaves

  • 1 14 1/2 ounce can chili-style chunky tomatoes OR: Mexican-style stewed tomatoes
  • 2 tablespoons Worcestershire
  • 2 eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 pounds lean ground meat-loaf mix (beef and pork)
  • 1 1/4 cups seasoned bread crumbs
  • 1/2 cup ketchup

Make It

1. Place rack in upper third of oven. Heat oven to 475 degrees F. Line jelly-roll pan with foil. Coat with nonstick cooking spray.

2. Combine tomatoes, Worcestershire, eggs, salt and pepper in large bowl. Add ground meat and bread crumbs, stirring until just combined. Divide mixture into 8 equal pieces; shape into mini-loaves. Place on prepared pan.

3. Bake in upper third of 475 degree F oven for 15 minutes. Spread ketchup over top of loaves. Bake 5 minutes more or until juices run clear and internal temperature registers 180 degrees F on an instant-read thermometer. Makes 8 servings.
