Marinated-Beef Skewers

  • 1 teaspoon ground cardamom
  • 1 teaspoon ground ginger
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon vegetable oil
  • 1/2 cup yogurt
  • 2 cloves garlic, finely chopped
  • 1/2 teaspoon salt, or to taste
  • 1 1/2 pounds beef sirloin, cut into 1-1/2-inch chunks
  • 1 large sweet green pepper, cored, seeded and cut into 1-1/2-inch squares
  • 8 cherry tomatoes

Make It

1. Combine cardamom, ginger, curry powder, cumin and black pepper in small bowl. Heat oil in small skillet over medium-low heat. Add spice mixture; cook, stirring, about 1 minute or until lightly browned. Do not let spices burn. Let cool briefly.

2. Stir together spices, yogurt, garlic and salt in medium-size bowl. Add beef; stir to coat. Cover with plastic wrap; refrigerate for at least 12 hours.

3. Heat broiler or prepare medium-hot coals in barbecue. Loosely thread beef cubes, pepper and cherry tomatoes on 4 metal skewers.

4. Broil the skewers about 3 inches from heat, turning 2 to 3 times, for about 10 minutes for medium-cooked beef, or less or longer for desired doneness. Makes 4 servings.
