Greek Tacos

A cucumber and feta cheese topper makes these seasoned beef tacos different than the version you usually eat. Give them a try for dinner some night.

Greek Tacos
Yield: 8 tacos

Ingredients

  • 1 teaspoon vegetable oil
  • 1 pound lean ground beef
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon mint
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 cup petite diced tomato in garlic, basil, and oregano
  • 1/3 cup ketchup
  • 8 taco shells, warmed
  • 1/2 seedless cucumber, shredded
  • 1 large tomato, chopped
  • 1/4 cup crumbled feta

Make It

1. In a saucepan, heat oil over medium-high heat. Add meat and onion and cook until browned, about 5 minutes. Add garlic, mint, paprika, and salt. Cook 1 minute. Stir in diced tomatoes and ketchup. Reduce heat to low and simmer 10 minutes. Serve with warmed taco shells, cucumber, tomato, and feta.
