Free-form Meat Loaf with Onion Gravy

Meat Loaf:
  • 2 eggs
  • 1/4 cup milk
  • 3/4 cup packaged seasoned bread crumbs
  • 2 pounds ground beef
  • 1 envelope (1.3 ounces) onion soup mix
  • 2 tablespoons Worcestershire sauce
  • 3 tablespoons ketchup
  • 1/2 teaspoon black pepper
Onion Gravy:
  • 1 tablespoon vegetable oil
  • 3 cups sliced onion (about 3/4 pound)
  • 2 jars (12 ounces each) savory beef gravy
  • 1/4 teaspoon black pepper
  • 1 bag (16 ounces) wide egg noodles, cooked and buttered
  • 8 servings frozen crinkle-cut carrot slices, cooked

Make It

1. Heat oven to 400 degrees F.

Meat loaf:

2. Lightly beat together eggs and milk in large bowl. Stir in bread crumbs until well blended; let stand until crumbs are softened, about 2 minutes. Add beef, onion soup mix, Worcestershire sauce, ketchup and black pepper; mix until well combined.

3. For free-form, shape meat mixture into loaf on foil-lined baking pan. Or, to bake in loaf pan, line 8-1/2 x 4-1/2 x 2-5/8-inch loaf pan with foil, leaving 2-inch overhang. Scrape meat loaf mixture into pan.

4. Bake in 400 degrees F oven for 45 minutes or until instant-read meat thermometer inserted in center reaches 160 degrees F.


5. Heat oil in large nonstick skillet over medium heat. Add onion; saute 25 minutes or until softened and golden. Add gravy and pepper; cook 5 minutes. Serve meat loaf with gravy and accompaniments.
