Chipotle Chili

Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, finely chopped
  • 1 tablespoon oil
  • 1 3/4 pounds ground beef
  • 2 tablespoons chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1 can (14-1/2 ounces) stewed tomatoes with green chiles
  • 1 chipotle chile in adobo sauce
  • 2 teaspoons adobo sauce
  • 2 teaspoons tomato paste
  • 1 can (19 ounces) red kidney beans, drained

Make It

1. Saute onion and garlic in oil in nonstick skillet over medium heat 8 minutes. Add ground beef, chili powder, salt, cumin and paprika.

2. Turn heat to medium-high; cook 7 minutes. Add tomatoes, chipotle chili, adobo sauce and tomato paste; simmer 15 minutes. Add beans; cook 5 minutes.
