Beef & Vegetable Kabobs

Ingredients

  • 3 ounces beef cubes (tenderloin or filet mignon)
  • 8 parboiled pearl onions
  • 8 slices from 1/2 red pepper
  • 8 slices from small zucchini
  • 1 tablespoon canola oil
  • 2 teaspoons lemon juice
  • 1/2 teaspoon cumin
  • 1 tablespoon chopped cilantro
  • Whole wheat pita

Make It

1. Marinate beef cubes, parboiled pearl onions, red pepper and small zucchini in canola oil, lemon juice, cumin and chopped cilantro.

2. Alternate meat and vegetables on 2 skewers; broil on grill or broiler pan 6 to 7 minutes about 4 inches from heat, turning once. Serve with hot 6-inch whole-wheat pita.
