BBQ Sloppy Joes

These miniature sandwiches are great party fare. Serve them for a kids' birthday party or when you invite the gang over to watch a football game on TV.

BBQ Sloppy Joes

Ingredients

  • 1 pound lean ground beef
  • 1 medium-size onion, diced
  • 2 cloves garlic, finely chopped
  • 1/2 teaspoon Italian herb seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 yellow summer squash, diced
  • 1 cup good-quality barbecue sauce
  • 12 small (3-inch) egg-twist dinner rolls or other dinner rolls
  • 1/2 pound prepared coleslaw
  • 12 sweet-and-sour pickles slices

Make It

1. In large nonstick skillet, combine beef, onion, garlic, herb seasoning, salt and pepper; cook over medium-high, breaking up meat with wooden spoon, for 5 minutes. Add squash; cook for 4 minutes. Stir in barbecue sauce; heat through. Remove skillet from heat.

2. Split rolls horizontally. Top each bottom with 1 tablespoon coleslaw and 1/3 cup meat mixture. Top with a sliced pickle and top of bun.
