Caribbean Rice

Ingredients

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon oil
  • 1 can (3.5 ounces) green chiles, drained
  • 1/2 teaspoon salt
  • 1 can (15 ounces) red kidney beans, drained and rinsed
  • 1 cup canned pineapple chunks, drained and halved
  • 1/2 cup toasted slivered almonds
  • 5 cups hot cooked rice

Make It

1. Saute onion and garlic in oil in skillet for 10 minutes. Puree in processor with green chiles and salt. Stir puree, beans, pineapple and almonds into rice.
