Fans of white chili will love this 30-minute recipe. Artichoke hearts and fresh tomatoes take this favorite in a new direction.
In 12-inch straight-sided skillet, heat oil over medium-high heat. Add onion; sauté until softened, 3 to 5 minutes.
Add the garlic, chicken and 1/2 teaspoon of the taco seasoning mix to the onion; cook until the chicken is no longer pink, about 5 minutes.
Stir the remaining taco seasoning and water into the chicken mixture. Bring to boiling. Add the artichoke hearts, tomatoes and beans; simmer, uncovered, 5 minutes. Garnish with chopped fresh cilantro, if desired. Makes 6 servings.
