Three-Bean Chili 'n' Biscuits

Chopped bacon gives smoky flavor to this spicy budget-minded chili. Use the biscuits to soak up every last drop.

Three-Bean Chili 'n' Biscuits

Ingredients

  • 2 tablespoons vegetable oil
  • 6 slices bacon, chopped
  • 1 large onion, chopped
  • 2 large sweet green peppers, cored, seeded and chopped
  • 1 28 ounce can crushed fire-roasted tomatoes
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 1/2 teaspoons garlic salt
  • 2 15 1/2 ounce cans pinto beans, drained and rinsed
  • 2 15 1/2 ounce cans red kidney beans, drained and rinsed
  • 1 15 1/2 ounce can black beans, drained and rinsed
  • 1 large package refrigerated buttermilk biscuits, optional

Make It

1. In large saucepan, heat oil over medium-high heat. Add bacon; saute 3 minutes. Add onion and peppers; saute until softened, about 5 minutes.

2. Add tomatoes and their juice, chili powder, cumin, oregano, garlic salt and beans; stir to combine. Simmer 10 minutes.

3. Meanwhile, bake biscuits as directed. Serve with chili if desired. Makes 12 servings.
