Pimiento Pilaf

Ingredients

  • 1/2 cup chopped onion
  • 2 cloves garlic, chopped
  • 1 tablespoon oil
  • 2 cups uncooked rice
  • 2 14 1/2 ounce cans chicken broth
  • 1/2 teaspoon dried tarragon
  • 1/4 tablespoon salt
  • 1/8 teaspoon pepper
  • 1 4 ounce jar chopped pimientos
  • 1 10 ounce package frozen peas, thawed

Make It

1. Saute onion and garlic in 1 tablespoon oil in saucepan. Mix in uncooked rice, chicken broth, tarragon, salt and pepper. Cover; simmer 15 to 17 minutes. Stir in pimientos and peas.
