  • Preheat a grill to medium-high or preheat the oven to 450°F. Place four 12x16-inch sheets of heavy-duty aluminum foil on a work surface. Lightly coat each with cooking spray.

  • Mix together black beans, corn, and diced veggies in a small bowl. Fill tortillas with 1/4 cup black bean mixture and 1 Tbs. cheese. Roll up the tortillas and place 2 enchiladas, seam-side down, on each piece of foil. Sprinkle each packet with 2 Tbs. cheese.

  • Fold up sides of foil and fold edges to seal tightly. Grill or bake packets (covered, if grilling) until enchiladas are warmed through and cheese has melted, about 8 minutes on the grill or 10 minutes in the oven.

  • Mix together tomato, green onion, and cumin in a small bowl.

  • Carefully open foil packs and top with tomato mixture and desired toppings.
