Ingredients

BBQ Mop Sauce
  • 12 ounces beer (not dark beer)
  • 1/2 cup apple cider vinegar
  • 1/4 cup vegetable oil
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons minced serrano chile (2 to 3 chiles)
  • 1 tablespoon black peppercorns
  • 2 cloves garlic, crushed
  • 4 fresh thyme sprigs
  • 1 bay leaf
  • 1/4 cup Texas BBQ Dry Rub (recipe follows)
Texas BBQ Dry Rub
  • 1/4 cup kosher salt
  • 3 tablespoons unrefined evaporated cane sugar
  • 3 tablespoons packed light or dark brown sugar
  • 1/4 cup chili powder
  • 1/4 cup Mexican chili powder
  • 2 tablespoons chipotle chile powder
  • 2 tablespoons freshly ground black pepper
  • 2 tablespoons ground cumin
  • 1 tablespoon smoked sweet paprika
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon celery salt
  • 1 tablespoon dry mustard
  • 1 teaspoon cayenne pepper

Make It

BBQ Mop Sauce

1. Combine beer, vinegar, oil, Worcestershire, chiles, peppercorns, garlic, thyme, bay leaf and 1/2 cup water in a saucepan over low heat. Add Texas BBQ Dry Rub and stir to combine. Cook over low heat about 5 minutes to bring flavors together.

2. Combine kosher salt, unrefined evaporated cane sugar, packed light or dark brown sugar, chili powder, Mexican chili powder, chipotle chile powder, freshly ground black pepper, ground cumin, smoked sweet paprika, onion powder, garlic powder, celery salt, dry mustard and cayenne pepper in a bowl and stir. Store in an airtight container in a dry place for up to 2 months.
