Make It

1. Remove meat from 1 rotisserie chicken and shred; discard skin. Mix with 3/4 cup store-bought barbecue sauce. Slice 2 avocados. Fill a platter with 12 Bibb lettuce leaves. Add an avocado slice to each, and then scoop chicken into leaves. Top with more avocado slices, 2 Tbs. finely chopped red onion, and 2 Tbs. chopped fresh cilantro. Serve with lime wedges and ranch or blue cheese dressing, if desired.


Speed Up Ripening
  • Store at room temperature in a paper sack with an apple or banana (both release ethylene gas, which speeds the process). Once ripe, store in the fridge up to ten days.
