Wash and scrub sweet potatoes. Pierce them with a fork, and microwave on high until they're soft, about 8 minutes. While the sweet potatoes are cooking, heat your oven to 400°F.
Cut the potatoes lengthwise, scoop out the flesh, and place in a large bowl. Add sugar, cinnamon, oil, maple syrup, and orange juice. Stir in oats and mix well.
Lightly grease a 9 x 13-inch baking pan. Pour mixture evenly into pan. Bake 23 minutes. Let cool 10 minutes. Cut into squares. Serve immediately or store for three days in an airtight container.
