Preheat oven to 375F.
If using canned pineapple, pat dry.
Line a baking sheet with foil and coat with cooking spray.
Lightly flour a work surface. Unfold pastry onto floured work surface. Brush with barbecue sauce and sprinkle with chicken, bell pepper and pineapple. Sprinkle with cheese. Roll up tightly and cut into 8 equal slices. Place cut side up on prepared baking sheet. Bake until golden brown, 15 to 20 minutes.
