Heat waffle iron. In a bowl,
beat heavy cream with 2 tsp
sugar to stiff peaks. Set aside.
In a large bowl, whisk
together flour, remaining 2 tbsp
sugar, the baking powder and
salt. In a separate bowl, stir
together milk, butter, egg yolk
and vanilla. Pour wet mixture
into dry mixture and stir until
just combined. Place egg whites
in another bowl and beat with a
hand mixer on high until fluffy.
Fold into batter.
Ladle batter into waffle iron
(about 1/2 cup per waffle). Cook
according to manufacturer's
directions. Repeat with
remaining batter. (Makes
about 6 standard waffles.)
Top each warm waffle with
