  • 1 3/4 cups whole wheat flour
  • 1/3 cup wheat germ
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/4 cup vegetable oil

  • 2 tablespoons wheat germ
  • 3 very ripe bananas, peeled and mashed
  • 1/4 cup milk
  • 1/2 cup light brown sugar
  • 1/3 cup almond butter
  • 1/4 cup apple butter
  • 1/4 cup sliced almonds

1. Heat oven to 350 degrees . Line a 9 x 5 x 3-inch loaf pan with nonstick foil. Set aside. In a medium bowl, whisk flour, wheat germ, baking powder and salt. In a large bowl, whisk eggs and oil. Add other ingredients as directed below.

2. Add 2 tbsp wheat germ to dry ingredients. Add 3 very ripe bananas, peeled and mashed, 1/4 cup milk, 1/2 cup packed light brown sugar, 1/3 cup almond butter and 1/4 cup apple butter to wet ingredients. Transfer to prepared pan and top with 1/4 cup sliced almonds. Bake at 350 degrees for 60 minutes.
