Baked Penne

Ingredients

  • 3 tablespoons unseasoned bread crumbs
  • 6 cups cooked whole wheat penne
  • 3 1/2 cups marinara sauce
  • 2 cups shredded reduced-fat mozzarella
  • 1/2 cup diced ham
  • 6 eggs, lightly beaten
  • 3 tablespoons grated Parmesan
  • Tossed salad (optional)

Make It

1. Heat oven to 350 degrees . Coat a 3-quart casserole with nonstick cooking spray and sprinkle bottom and sides with bread crumbs.

2. In a large bowl, combine penne, 3 cups of the marinara sauce, 1 1/2 cups of the mozzarella, the ham and eggs. Spoon into prepared casserole and sprinkle remaining 1/2 cup mozzarella over top. Bake at 350 degrees for 30 minutes. Sprinkle Parmesan over casserole and bake an additional 15 minutes.

3. Cut into portions and serve with remaining 1/2 cup of marinara sauce, warmed, and, if desired, a tossed salad.
