Apricot-Gingerbread Oatmeal

Ingredients

  • 4 cups reduced-fat milk
  • 2 cups rolled oats
  • 3/4 cup chopped dried apricots
  • 1/2 cup chopped walnuts
  • 1/4 cup raisins
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon kosher salt
  • 1 tablespoon molasses
  • 1/2 teaspoon vanilla extract

Make It

1. Combine the milk, oats, apricots, walnuts, raisins, cinnamon, ginger, and salt in a large saucepan. Bring to a boil over medium heat; reduce heat and simmer 5 minutes.

2. Remove from heat and stir in molasses and vanilla.
