Sweet Red-Pepper Dip

  • 1 teaspoon olive oil
  • 1/2 medium red bell pepper, seeded and diced
  • 1/2 medium tomato, chopped
  • 1 tablespoon light-brown sugar
  • 1/8 teaspoon salt

Make It

1. Heat oil in medium nonstick skillet over medium-high heat; add bell pepper and cook about 4 minutes, until softened. Reduce heat to medium; add tomato and cook, stirring frequently, 2 minutes. Stir in sugar and salt; cook about 30 seconds.

2. Transfer to bowl of food processor fitted with metal blade; process about 1 minute, until sauce is smooth.
