Sun-dried Tomato And Provolone Panini

Ingredients

  • 1/4 cup sun-dried tomatoes (dry-pack)
  • 1 tablespoon mayonnaise
  • 2 mini rolls, such as dinner Parker House rolls, halved
  • 1 slice provolone, cut in half
  • 4 pieces arugula

Make It

1. Blanch tomatoes in boiling water, 5 minutes. Drain. Finely chop. Mix with mayonnaise. Spread over rolls. Place cheese on bottom half.

2. Broil 3 minutes until cheese melts. Top with arugula and roll tops. Makes 2 mini panini.
