1. Heat oven to 375 degrees F.
2. Cut eggplant in half lengthwise. Score flesh side of each half with fork. Place halves, skin side down, on baking pan.
3. Bake in 375 degree F oven for about 30 minutes or until eggplant is softened. Let cool.
4. Scrape eggplant flesh into food processor. Add the garlic, vinaigrette, salt and pepper. Process until the mixture is smooth. Serve the baba ganoush with pita crisps, crackers or crudite. Makes about 1-1/2 cups.
