Pecan Cheese Logs

Include make-ahead appetizers such as these cheddar cheese logs in your party menu. Green chiles and cayenne pepper give a Tex-Mex style to the spread.

Pecan Cheese Logs
Yield: 2 logs Prep 15 mins Chill 1 hr 30 mins


  • 2 packages (8 ounces each) cream cheese, at room temperature
  • 1 1/2 cups shredded cheddar cheese
  • 2 cans (4 ounces each) diced green chiles, drained
  • 1/4 cup dried onion flakes, softened in 1/4 cup water
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 2 cups chopped pecans
  • Crackers, sliced fruit and vegetables for serving

Make It

1. In a large bowl, mix cream cheese, cheddar cheese, chiles, softened onion flakes, garlic powder and cayenne pepper. Form into two 8-inch logs, wrap and refrigerate for about 15 minutes.

2. Place nuts on parchment or waxed paper and roll each log in the nuts. Wrap in plastic and refrigerate for at least 1 hour. Serve with crackers and sliced fruit and veggies.
