Fried Zucchini Sticks

  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/4 cup milk
  • 1 1/4 cups dry, flavored bread crumbs
  • 1 1/2 pounds zucchini, cut into 2-1/2 x 1/2-inch sticks
  • Oil, for frying

Make It

1. Combine flour and salt on waxed paper. Combine eggs and milk in small bowl. Place bread crumbs on second sheet of waxed paper. Coat zucchini with flour mixture; dip in egg mixture; coat with bread crumbs; place on baking sheet. Place sheet in freezer 10 minutes.

2. Heat 1-1/2 inches of oil in an electric frying pan or regular deep skillet to 375 degrees F.

3. Working in 4 batches, add zucchini to hot oil; fry, turning with slotted metal spoon, until golden brown, 2 to 3 minutes. Remove with slotted spoon to paper toweling to drain. Serve with bottled tomato sauce if you wish.
