1. Pour oil into medium-size pot to depth of 5 to 6 inches. Heat to 325 degrees F on deep-fat frying thermometer.
2. With slotted metal spoon, add 10 potato sticks at a time to oil; fry 2 minutes, until very lightly colored. Remove with spoon to pan. (Let oil return to 325 degrees F before adding more sticks.)Second frying:
3. Heat oil to 375 degrees F. Working in 2 or 3 batches, add sticks to oil; fry 1-1/2 to 2 minutes, until golden brown and cooked through. With spoon, transfer to toweling to drain. Sprinkle with salt.
