Easy Pepper-Jack Spread
Yield: about 1-1/2 cups Prep 20 mins Chill 24 hrs

Ingredients

  • 1 scallion, chopped
  • 3 hot-pepper sauce
  • 4 ounces cream cheese, softened
  • 1/2 cup jalapeno-flavored Monterey-Jack cheese, cubed
  • 1/2 cup sharp cheddar cheese
  • 1 tablespoon lime juice

Make It

1. Combine 1 chopped scallion, 3 dashes hot-pepper sauce and 4 ounces softened cream cheese in bowl of food processor. Whirl until finely chopped.

2. Add 1/2 cup cubed jalapeno-flavored Monterey Jack cheese, 1/2 cup cubed sharp cheddar cheese and 1 tablespoon lime juice. Pulse until well blended and very smooth. Turn into small bowl.

3. Cover and refrigerate at least 24 hours or up to 1 week. Serve with assorted crackers.
