Creamy Crudite Dip Recipes

Ingredients

Ginger Asparagus Tofu Dip:
  • 1 pound asparagus spears
  • 1/2 cup "silken" (softest) tofu
  • 1 tablespoon coarsely choppped fresh basil
  • 1 teaspoon fresh ginger, peeled and sliced
  • 3/4 teaspoon fresh lemon juice
  • 3/4 teaspoon reduced-sodium soy sauce
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon chopped garlic
Mediterranean Red Pepper Dip:
  • 1 red pepper
  • 1 1/2 tablespoons olives, chopped
  • 1 tablespoon fresh basil, chopped
  • 1/2 teaspoon olive oil
  • 1/8 teaspoon garlic
  • Salt and freshly ground black pepper, to taste
Creamy Garbanzo Dip:
  • 1 19 ounce can garbanzo beans
  • 2 tablespoons water
  • 1/2 cup parsley
  • 5 tablespoons reduced-fat sour cream
  • 4 teaspoons fresh lemon juice
  • 1 tablespoon cumin
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon each salt and freshly ground black pepper

Make It

Ginger Asparagus Tofu Dip:

1. Steam asparagus spears until they start to wilt (about 10 minutes). Cut off any tough stalks and puree rest in a food processor along with tofu, basil, ginger, lemon juice, soy sauce, sesame oil and chopped garlic. Makes about 1 cup.

Mediterranean Red Pepper Dip:

4. Roast a red pepper (in the broiler, or, using long tongs, over a gas stovetop). Peel and puree in a food processor with olives, basil, olive oil, garlic, salt and pepper. Makes 1 cup.

Creamy Garbanzo Dip:

6. Drain garbanzo beans and simmer in a pot with water for 5 minutes. Cool; puree in blender with parsley, reduced-fat sour cream, lemon juice, cumin, garlic, salt and pepper. Add water as needed for consistency. Makes 2 cups.
