Caribbean Nuts

An egg white helps the brown sugar and Jamaican-style spices cling to the peanuts. Pack the snack into decorative containers and give as holiday gifts.

Caribbean Nuts

  • 2 tablespoons brown sugar
  • 1 egg white
  • 1 tablespoon onion powder
  • 1 tablespoon dried thyme
  • 2 teaspoons ground allspice
  • 2 teaspoons black pepper
  • 1 teaspoon salt
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 4 cups dry-roasted unsalted peanuts

Make It

1. Heat oven to 300 degrees F.

2. Whisk together the brown sugar, egg white, onion powder, thyme, allspice, pepper, salt, cinnamon and nutmeg in large bowl. Add peanuts to sugar mixture, 1 cup at a time, stirring well after each addition until peanuts are evenly coated with seasoning mixture. Turn nut mixture out into an ungreased 15 x 10 x 1-inch jelly-roll pan.

3. Bake in 300 degrees F oven 30 minutes or until peanuts are lightly colored, stirring every 10 minutes. Transfer pan to wire rack and let cool.
