An egg white helps the brown sugar and Jamaican-style spices cling to the peanuts. Pack the snack into decorative containers and give as holiday gifts.
Heat oven to 300°F.
Whisk together the brown sugar, egg white, onion powder, thyme, allspice, pepper, salt, cinnamon and nutmeg in large bowl. Add peanuts to sugar mixture, 1 cup at a time, stirring well after each addition until peanuts are evenly coated with seasoning mixture. Turn nut mixture out into an ungreased 15 x 10 x 1-inch jelly-roll pan.
Bake in 300°F oven 30 minutes or until peanuts are lightly colored, stirring every 10 minutes. Transfer pan to wire rack and let cool.
