Caramel Popcorn Mix

  • 10 cups popped popcorn
  • 1 cup roasted peanuts
  • 2 cups wheat cereal squares
  • 1 cup salted wheat crackers, broken into bite-size pieces
  • 1/2 cup (1 stick) butter
  • 1 cup firmly packed dark-brown sugar
  • 1/2 cup light corn syrup
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon vanilla

Make It

1. Preheat oven to 250 degrees F.

2. Toss together popcorn, peanuts, cereal and broken crackers in large roasting pan.

3. Melt butter in a medium-size saucepan over low heat. Add brown sugar and corn syrup. Bring mixture to boiling, stirring constantly. Gently boil without stirring for 5 minutes. Remove from heat. Stir in baking soda and vanilla until smooth.

4. Pour corn syrup mixture over popcorn mixture in roasting pan; toss to coat evenly.

5. Bake in preheated 250 degrees F oven for 1 hour, stirring every 15 minutes. Remove from oven and cool. Break popcorn into small clusters. Store in airtight container for up to 1 week.
