All-In-One Breakfast Dinner

Ingredients

For the waffles:
  • 1 pound sweet potatoes, peeled and grated
  • 1/2 pound cooked and crumbled turkey sausage
  • 1/4 cup cornmeal
  • 2 shallots, minced
  • 1 tablespoon canola oil
  • 2 teaspoons fresh thyme leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 large eggs, lightly beaten
For the topping:
  • 6 fried eggs
  • 2 tablespoons chopped chives

Make It

1. In a large bowl, toss together all the ingredients for the waffles except the eggs, then stir in the eggs until well blended.

2. Coat a waffle iron with cooking spray and heat it according to the manufacturer's instructions. Ladle on 1/2 cup of the waffle mixture (the amount may vary depending on the size of your iron). Cook until set and crispy, about 7 minutes. Repeat with the remaining batter. Serve each waffle topped with an egg and a sprinkle of chopped chives.
