Todd English's Delicious Mocktail Recipes
According to chef Todd, he wanted tasty alcohol-free drinks on the menu that were as satisfying as cocktails but allowed his clientele to go back to work without being tipsy. Trust me, they taste as terrific as they look, and would be perfect for a purple and orange-themed shower (a hot color combo right now), a Carribean dinner party, Mocktail Mondays with your pregnant girlfriends, or just a plain ol' Tuesday night in. Hallow Vera (Makes 1 cocktail)
1 oz. pomegranate juice
1 oz. Pomegranate Shrub (recipe below)
3 oz. aloe juice
2 oz. club soda
Squeeze of lime juice
Fill a shaker with ice cubes. Add all ingredients. Shake and strain into glass. Top with club soda. Garnish with fresh lime wedge.
4 cups pomegranate seeds
1 cup sugar
1 cup apple cider vinegar
1 tbsp. pomegranate molasses
In a quart container, mash pomegranate seeds with a muddler until juice forms. Add sugar to coat and pomegranate molasses coating completely, cover and let sit overnight or up to 8 hours in the refrigerator. The following day, add vinegar and cook on stove over medium low heat until sugar is completely dissolved. Remove from stove and strain out/remove seeds using a sifter.
Kame-e-Meel Kool (Makes 1 cocktail)
2 oz. chamomile tea
2 oz. grapefruit juice
.5 oz. honey anise syrup
Splash of fresh lemon juice
2 drops of grapefruit bitters
Fill a shaker with ice cubes. Add all ingredients. Shake and strain into glass. Garnish with grapefruit peel.
