Honey-Cayenne Grilled Pork Chops
Secret Trick: I often make this with double-boned lamb chops (my kids like them just as much as pork) or boneless, butterflied pork chops (they end up thinner, which means they will cook even faster than bone-in chops).

Sweet Corn Chowder With Green Chiles
“I make soup when it’s cloudy or cold. It’s just a habit. My mother did it, so I do it, and on down the line with my kids, with luck.”
Secret Trick: If the chiles make this soup too hot for you, add a drizzle of honey over your bowl.

Jalapeño Salmon Burgers
“I like mine with Tabasco, but the jalapeño should make it spicy enough for the rest of you. Ripe tomato or fresh herbs would also be great additions.”
Secret Trick: Salmon burgers are stickier and trickier to work with than regular burgers, but if you keep your hands wet as you form the patties, all will be well.

Fight Night Nachos
“This is Fight Food at my house. No, we don’t fight. I mean when the UFC is on, I make steak nachos. Big sporting events demand nachos.”

Green Sauce
This sauce makes a delicious topping on nachos, or on its own as a dip!
