These mini cupcakes are actually served in cups, making them a perfect fit for a tea party themed baby shower.
There's just one word to describe this pretty teacup cupcakes "adorable." They're surprisingly easy to make and decorate, which means you can bake enough for a crowd in no time. First, butter the insides of eight oven-safety cups. White cups will show off the pastel frosting colors the best, so use white if you have them. Then, flour the cups and place them on a baking sheet. Next, we'll cream 12 tablespoons that's 1-1/2 sticks of room temperature salted butter with 1-1/2 cups of sugar until it's fluffy. Beat in a total of four eggs, but add them one a time and beat well after adding each one. Once all four eggs have been beaten in, stir in one teaspoon of vanilla extract. Add four tablespoons of melted white chocolate and mix it in well. Now, add three cups of flour, then add one teaspoon of baking powder. Mix that in well. And then, mix in one cup of milk. Divide the butter evenly among the teacups filling them about two-thirds full. We're using a large ice cream scoop to make this job easier. Bake the cupcakes at 350 degrees Fahrenheit for about 20 minutes or until the top spring back when you touch them. Cool the cupcakes and teacups completely on a wire rack. While the cupcakes are cooling, divide two cups of white frosting into four equal portions in small bowls. Stir a few drops of food coloring into each bowl to make pastel shades. We're making green, yellow, pink, and blue. When the cupcakes are cooled, frost them. Lastly, sprinkle them with coconut flakes. About a half cup of coconut flakes will be plenty. Place the teacups back on their saucers and that's it. Teacup cupcakes!
