These monkey-around cupcakes are the perfect desert, not only they are delicious banana cupcakes with a rich chocolate glaze, but the adorable monkey faces are easy to create with cookies and candy. First, make the chocolate glaze. In a small saucepan, heat a half cup heavy cream over medium high heat and stir in two tablespoons of corn syrup. Bring it to a boil. Remove the pan from the heat and add one and a half cups of chocolate chips. Submerge the chips in the hot cream and cover the pan. Let it sit for five minutes until the chocolate melts. Stir the glaze until it's smooth. The recipe makes 18 banana cupcakes. Make sure they're fully cooled before you begin decorating them. To glaze the cupcakes evenly, dip the tops straight into the glaze and let the extra drip off. Set them upright on a rack. When you glaze all the cupcakes, put the extra glaze in a piping bag or a plastic zip bag and refrigerate it to use later. To make the monkey's mouth, take 18 gingersnaps and cut them horizontally with a serrated edge about a quarter of the way down. Arrange the pieces on the cupcakes so the small piece is on top. To make the monkey's ears, scrape the cream filling from 18 mini Oreos, then adhere two cookie halves to decide of each cupcake. Next, use a 4.2 ounce tube of white decorator's frosting to make the whites of the eyes. Then put a mini brown M&M in the center of each eye. Finally, snip a small sprout on the piping bag with the extra chocolate glaze and use it to pipe on hair and then pipe nostrils. Your guest will go wild over these adorable, delicious cupcakes.
