Q: My son was just diagnosed with food allergies -- eggs and milk. Milk is easier to substitute as there are many soy products that taste really good. But eggs, not so much. (He loves scramble eggs.) Any ideas for good and safe egg substitutes?
A: I agree that it’s a bit more challenging to find a good substitute for eggs -- especially scrambled eggs -- than it is for dairy milk. There are several good egg replacement products on the market that work great in recipes for muffins, cookies, and casseroles. You can even substitute foods that you probably already have at home, such as applesauce, yogurt, mashed bananas, or mashed avocados, in some recipes that call for eggs. However, it’s harder to find a product that duplicates the taste and texture of scrambled eggs. “Scrambled” tofu is one option, but my own kids wouldn’t go for it. As you introduce your son to a wider variety of egg-free foods, he’ll probably find one that he loves just as much as scrambled eggs.
