Even if the summer or winter games are far away, this Olympic cake is perfect for a sports theme birthday. Using paper templates, makes it easy to create the perfectly round circles of those iconic interlocking olympic rings. To start, you'll need a 9 x 13 inch dense cake like pound cake. Check the package directions on your box of yellow or devil's food cake mix for how to make a pound cake variation. Level the top with a serrated knife. Next, cut 5-3/4 inch circles from paper to form the Olympic rings. Then, cut five smaller 5-1/4 inch circles. These will help us create the center of the Olympic rings. Arrange the five larger outer circles on the cake to form the shape of the Olympic rings. Use toothpicks to hold the pattern in place. Next, cut around the paper pattern using a serrated knife. Transfer the cake to a serving platter. Put one cup of whipped vanilla frosting from a 12-ounce can in a medium bowl and use it to frost the entire top of the cake. Add a thin layer of frosting to the sides as crumb coat. Divide the remaining frosting in the can plus the frosting from a second 12-ounce can between five balls and using gel food color. Tint each ball a different color, black, red, yellow, green, blue. Scrape each ball of frosting into a resealable plastic bag. Snip the ends. Gently place the larger paper circle back on the cake to indicate the outside of each ring and trace around them with a toothpick to make a guideline. Then gently place the smaller paper circles on the cake to indicate the inside of each ring and trace around them with a toothpick to make a guideline. Continue marking the cake with all five rings. These outlines will serve as the roadmap for your coloring scheme. It's good to have a photo of the Olympic rings handy to use for reference paying attention to how the rings overlap each other. Patience and diligence are the key ingredients in this cake design. Now spread the remaining colored frosting on to the sides of the cake matching it to the colors of the rings. Smooth the pipe frosting with a small spatula heated in hot water. Finally, decorate the cake with paper flags before serving.
