1. Mix mustard and honey. Spread on four slices of rye. Top with ham and cheese; sandwich with remaining slices.
2. In a shallow dish, mix egg and milk. Soak both sides of sandwiches in egg mixture until most of the liquid is absorbed. Heat butter and oil in a medium saute pan over medium heat. Cook sandwiches 3 minutes per side, until golden, and egg is cooked.
