We simplified this Chinese favorite by rolling its sweet filling inside a sturdy flour tortilla instead of a traditional pancake. Moo-Shu Pork filling typically includes wood ear mushrooms, named for how they look growing on the sides of trees. We used easier-to-find shiitakes.

It's Greece meets West (well, Southwest) with this simple-to-make spanakopita-quesadilla combo. Even kids who don't usually like spinach may come around when it's mixed with feta and mozzarella and tucked inside a crispy tortilla.
