    We simplified this Chinese favorite by rolling its sweet filling inside a sturdy flour tortilla instead of a traditional pancake. Moo-Shu Pork filling typically includes wood ear mushrooms, named for how they look growing on the sides of trees. We used easier-to-find shiitakes.
