4 cups romaine lettuce
2 medium yellow peppers, seeded and cut into strips
1 1/2 cups thinly sliced red cabbage
1 1/2 cups sliced carrots
1 pint cherry tomatoes, halved
1 large cucumber, peeled and diced
Layer ingredients in a glass bowl. Serve with your favorite dressing.
