Spinach Brownies

Your kids will never guess what healthy ingredient these brownies have in them.
Heat oven to 350°F. Line a 9"x13" pan with foil and coat with cooking spray. Squeeze out the liquid from a thawed box (10 oz.) of chopped frozen spinach. Place spinach, 1/4 cup vegetable oil, and 1/3 cup carrot juice in blender and puree.
In a large bowl, combine a box (21 oz.) of family-style brownie mix, 3 eggs, and the spinach mixture. Stir until well blended. Spread batter in prepared pan and bake 40 minutes. Makes 24 brownies.
