Fast, Fabulous Beans

Try these delicious bean recipes to relieve constipation or just as a healthy snack.

Beans are nutritional powerhouses filled with protein and lots of fiber. If you're finding constipation a problem, as many pregnant women do, the large amount of fiber in beans can help relieve your constipation. But finding ways to include beans in your diet can be a challenge: There's a limit to how much chili you can eat! For variety, try one of these super-fast, super-delicious recipes.

Black bean salsa. Mix 1 can black beans (drained) with 1 can of corn. Add a 12-ounce jar of your favorite salsa and mix together. Serve over grilled chicken, tossed with pasta, or with cut-up pita bread for dipping.

White bean dip. Put 1 can cannellini beans (drained), 1 teaspoon minced garlic, 1 teaspoon dried rosemary, and 1 tablespoon extra-virgin olive oil in a food processor. Process until smooth, adding water if needed to make a smooth puree. Serve as a dip for thin slices of French bread, vegetables, or cut-up pita bread.
