Easy One-Dish Dinners

A casserole is the quintessential winter supper. And a big bonus for moms: you can prepare it during your downtime, then, during the always-crazy dinner hour, just pop it in the oven. Try one, try all -- no doubt your family will find its favorite.

Easy Cheese-Ravioli Casserole

Prep Time: 15 minutes
Chilling Time: 2 to 24 hours
Baking Time: 40 minutes
Standing Time: 10 minutes
Makes: 12 servings

Ingredients:
2 9-ounce packages refrigerated four-cheese or beef ravioli
7-ounce jar oil-packed sun-dried tomatoes, drained and chopped
1 1/2 cups shredded cheddar cheese (6 ounces)
1 1/2 cups shredded Monterey Jack cheese (6 ounces)
1/2 cup grated Parmesan cheese
8 eggs, beaten
2 1/2 cups milk
1 to 2 tablespoons snipped fresh basil or Italian flat-leaf parsley

Directions:

  1. Grease a 3-quart rectangular or oval baking dish. Place uncooked ravioli evenly in dish. Sprinkle with tomatoes to taste. Top with cheeses; set aside.
  2. Whisk eggs and milk together until combined. Pour over layers in dish. Cover; chill for 2 to 24 hours.
  3. Preheat oven to 350 degrees F. Bake, uncovered, 40 minutes or until top is golden and center is set. Let stand 10 minutes. Sprinkle with basil just before serving.

Nacho Turkey Casserole

Prep Time: 15 minutes
Baking Time: 30 to 35 minutes
Makes: 8 servings

Ingredients:
5 cups slightly crushed tortilla chips
4 cups cubed cooked turkey or chicken (about 1 1/4 pounds)
2 16-ounce jars salsa
10-ounce package frozen whole-kernel corn
1/2 cup sour cream
2 tablespoon all-purpose flour
1 cup shredded Monterey Jack cheese with jalapeno peppers (4 ounces)

Directions:

  1. Preheat oven to 350 degrees F. Place 3 cups of the tortilla chips in bottom of a lightly greased 3-quart rectangular baking dish. In a large bowl, combine turkey, salsa, corn, sour cream, and flour; spoon over tortilla chips.
  2. Bake, uncovered, for 25 minutes. Sprinkle with the remaining 2 cups tortilla chips and the cheese. Bake 5 to 10 minutes more or until heated through.

Popover Pizza Casserole

Prep time: 30 minutes
Baking time: 30 minutes
Makes: 8 servings

Ingredients:
1 pound uncooked ground turkey or beef
1 cup chopped onion
1 cup chopped green sweet pepper
1/2 of a 3-1/2-ounce package sliced pepperoni (optional)
15-ounce can or 15-1/2-ounce jar pizza sauce
4-ounce can mushroom stems and pieces, drained
1 1/2 teaspoon dried Italian seasoning
2 eggs
1 cup milk
1 tablespoon cooking oil
1 cup all-purpose flour
6 ounces thinly sliced mozzarella cheese
1/4 cup grated Parmesan cheese

Directions:

  1. Preheat oven to 400 degrees F. In a large skillet, cook turkey, onion, and green pepper until meat is brown and vegetables are tender. Drain fat. Cut pepperoni slices in half. Stir pepperoni, pizza sauce, mushrooms, and Italian seasoning into meat mixture. Bring to boil; reduce heat. Simmer, uncovered, 10 minutes, stirring occasionally.
  2. Meanwhile, for topping, in a medium bowl, combine eggs, milk, and oil. Beat with an electric mixer on medium speed for 1 minute. Add flour; beat 1 minute more or until smooth. Grease the sides of a 3-quart rectangular baking dish; spoon meat mixture into dish. Arrange cheese slices over hot meat mixture. Pour topping over cheese, covering completely. Sprinkle with grated Parmesan cheese.
  3. Bake 30 minutes or until topping is puffed and golden brown. Serve immediately.

Hamburger Pie

Prep time: 30 minutes

Ingredients:
1 1/4 pounds lean ground beef
1/2 cup chopped onion (1 medium)
1/4 teaspoon salt
Dash black pepper
2 1/2 cups frozen cut green beans, thawed
10-3/4-ounce can condensed tomato soup
24-ounce package refrigerated mashed potatoes
1/2 cup shredded processed American cheese (2 ounces)

Directions:

  1. Preheat oven to 350 degrees F. In a large skillet, cook meat and onion until meat is brown and onion is tender. Drain off fat. Add salt and pepper. Stir in thawed beans and soup; pour into a greased 2-quart rectangular baking dish or casserole.
  2. Spoon refrigerated potatoes in mounds on bean mixture. Sprinkle cheese over potatoes. Bake, uncovered, 30 to 35 minutes or until mixture bubbles and cheese begins to brown.
